Papas began in 2019 with a simple idea — that a neighbourhood deserves a place where the coffee is serious, the food is generous, and nobody rushes you out the door. Our kitchen draws on the Levant, the Mediterranean and wherever else the day takes us. Our beans are roasted weekly. And our door is open early.

The tree on our cans has roots for a reason. Papas is a family business, planted in Willoughby and grown by the people who walk through the door every morning — the tradies at 6:30, the pram brigade at 10, the long lunches that turn into afternoons.
We bake our muffins in-house, press our juice the morning of, and roast weekly so nothing sits around. If you’ve got a little one in tow, ask for a babyccino with a marshmallow — it’s two dollars and it makes their day.
